Merry X-mas

Jeremys Mom knowing I eat very little meat got me this massive recipee book. And I knowing that your a vegan decided to type you up a few in case you need recipee ideas. Theres 1000 recipees in this thing so I typed like 3. lol. Hope you enjoy!

Cheese & Bean Quesadillas

14oz/400g canned refried beans
8 flour totrillas
1 & 3/4 cups grated cheddar cheese
1 onion, chopped
1/2 bunch of fresh cilantro leaves, chopped
1 quantity salsa

Around 20mins

1. Place the beans in a small pan and set over low heat to warm through.

2. Meanwhile, make the tortillas pliable, by warming them gently in a lightly greased non-stick skillet.

3. Remove the tortillas from the skillet and quickly spread with a layer of warm beans. Top each tortilla with grated cheese, onion, fresh cilantro, and a spoonful of salsa. Roll up tightly.

4. Just before serving heat the nonstick skillet over medium heat, sprinkling lightly with a couple drops of water. Add the tortilla rolls, cover the skillet, and heat through until the cheese melts. Let it brown lightly, if wished.

5. Remove the tortilla rolls from the skillet and slice each roll, on the diagonal, into about 4 bite size pieces. Serve the quesadillas at once.


Potato Skins


4 large baking potatoes
2 tsp olive oil
coarse sea salt and pepper
chopped fresh chives to garnish

1 & 3/4 hours

1. Bake the potatoes in a preheated oven at 400 degrees for 1 & 1/4 hours. Remove from the oven and let cool for 30 minutes. Reset oven to 425 degrees.

2. Halve the potatoes lengthwise and scoop out 2 tablespoons of the flesh, then slice the potatoes in half again.

3. Place on a cookie sheet and brush the flesh side lightly with oil. Spirnkle with salt and pepper. Bake for 25 minutes until the potatoes are golden and crisp.

4. Drain the potato skins on paper towels and transfer to a warmed serving platter. Garnish with chives.

I recomend sour cream to eat them with, the book recomends guacamole.

Potato Fans

6 large potatoes, scrubbed but not peeled
2 tbsp garlic flavored oil

1 hour

1. Make a series of cuts across the potatoes almost all the way through. Cut out 6 squares of foil, each large enough to enclose a potato.

2. Place a potato on each square of foil and brush generously with the garlic flavored oil. Fold up the sides to enclose the potatoes entirely.

3. Cook on a hot grill, turning ocassionally, for 1 hour. To serve, open the foil parcels and gently pinch the potatoes to open up the fans.

Not in the recipee book but its one my Mom made for us as kids for a quick snack.

Pizza Whichs

bread(as many slices as needed)
a jar of spaghetti sauce
any extra toppings(mushrooms, etc.)

Around 15 minutes

1. Preheat oven to 450 degrees

2. Get a cookie sheet and put 6 slices of break on it(enough to cover the sheet) and cover each slice of bread generouslly with sauce and cheese and any other toppings.

3. Throw in the oven till the cheese looks melted, maybe a little bubbly for best taste.*

4. Eat and enjoy.

*This wil only work if you used slices of cheese to make it.


Ok, thats it for now. I gotta get up and move around and I wanna try some of these recipees too. Tell me how you like them! The last ones more for Trent then you, but I still eat it so you might too.
